2 cups flour
1 teaspoon baking soda1/4 teaspoon salt
1/2 cup butter
3/4 cup brown sugar
2 large eggs, beaten
4 over ripe bananas
1/2 cup chopped pecans
Directions:
Preheat oven to 350°
Line muffin pan with paper liners
In a large bowl, combine flour, baking soda and salt and set aside.
In a mixing bowl, cream together the butter and sugar.
Add the eggs and mashed bananas and mix until well blended.
Add the flour mixture into the banana mixture and mix until completely blended
Fold into the batter the chopped pecans
Fill each muffin compartment to the top with the banana batter.
Bake 20-25 minutes
