1 package (16 oz) rainbow rotini spiral pasta
1/2 cup sliced black olives
1/2 cup sliced kalamata olives
1 cup diced marinated artichoke hearts
1 cup sliced cherry tomatoes
1 cup goat cheese or feta cheese (based upon your preference)
Zesty Italian dressing or white balsamic dressing
Black pepper to taste
Bring a large pot of water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain and cool with cold water. Drain completely and place in a large bowl.
Mix olives, artichoke hearts and tomatoes with the pasta.
Mix in your dressing of choice and black pepper to taste
Finish off with goat or feta cheese
