Crispy baked sweet potato fries


Preheat oven to 400°

Ingredients:
1 large sweet potato (enough fries for two people)
2 heaping Tbsp. corn starch
olive oil


Seasoning:
black pepper 
paprika
cayenne (if you like spicy fries)


Directions:
Peel and slice sweet potato into thick rounds

Place the sliced potatoes in a bowl of water with ice and soak for 15-20 minutes – this process removes the starch and hydrates the potatoes

Prepare a baking sheet by covering with foil and coating with olive oil

Next, remove from water and place in a salad spinner to remove all water

Move the sliced potatoes into a bowl and mix with seasoning

Take a large Ziploc bag and add 2 heaping tbsp. full of corn starch
Place seasoned potatoes into the Ziploc bag and close
Shake the bag to coat the potatoes thoroughly

Place fries onto prepared baking sheet then flip over each fry so both sides are coated with olive oil. You might have to add a little extra olive oil.

Cook for 30 minutes, turning fries every 10 minutes – the last 10 minutes watch them carefully. Depending on the thickness of your potatoes they might cook faster than expected
